Big Guy cultivated a bumper crop of basil this year, so I just HAD to make more pesto to sustain me, and my friends, into the Fall. I will admit the thought was crossing my mind especially when I found a large bag of pine nuts at my local grocery store. YES! I am a big fan of Ina Garten, aka the Barefoot Contessa, so I turned to her recipes gracing my bookcase for inspiration. Ina never disappoints and has always tested out her recipes to assure confidence and perfection every time. I love that about her! The best part, despite the scorching temperature in the Lou, I didn’t have to turn on my oven to stay creative in my cool kitchen. I guess I better start thinking about other ways to use my basil. You can only use so much pesto!
