I do not know about you, but I am feeling like we are getting an early Fall. I found myself walking through the aisles of my grocery store picking up the ingredients for soup.
I decided to start with tortellini and meatball soup. It is like Italian wedding soup as the star is, surprise, tortellini, and meatballs. I realize it sounds like a big name for a soup and probably makes you believe it will be difficult, but this soup goes together very quickly since the basic ingredients are the trinity of onions, carrots, and celery sauteed in olive oil followed by the addition of chicken broth, meatballs, tortellini, and spinach. I am lucky that I tend to have meatballs on hand, but you can certainly pick some up in your freezer section of the store along with your tortellini. Season to taste, top with some parmesan cheese with crusty bread on the side. It is the perfect meal as the days get shorter and cooler!
